February - Sandwich Month

I declared February sandwich month - because I do all the cooking in my house and I can do that. This year only, we will be featuring sandwiches, burgers, etc - on the menu in our house.

Philly Cheese Steak

When I told my husband he was a little disappointed - because naturally when some of us think of a sandwich we think of peanut butter and jam. But I listed a few of the sandwich offerings to come and then he was okay with it.

Here are a few of the sandwiches we've had thus far:

Burger King style crispy chicken sandwich (much cheaper to make at home)
Turkey cranberry croissant (recipe below)
BBQ Ham sandwiches (they looked a lot like Arby's roast beef sandwiches)
Philly Cheese steak (our Valentine's dinner)
Moons over Mihammy sandwich (a copycat version like the one from Denny's restaurant)
BLT with avocado and cheese
Fried egg, bacon, avocado and cream cheese sandwich (yummy - my breakfasts on many occasions)

And here are a few of the sandwiches to come:

French Dip au jus
all-American Bacon cheeseburgers
Grilled pineapple teriyaki burgers
Jibarito (wheat free)
Meatloaf sandwiches
Gyros and ajvar (b/c pita pockets still count as sandwiches)
Stuffed French Toast
Roasted Eggplant and Red Pepper Panini
Muffaletta (maybe?)
Falafel
Ham, turkey, bacon subway style sandwiches :)

BBQ Ham sandwich, spinach salad, chips, melon
Crispy chicken sandwich and home made french fries
Bacon, Avocado, Fried Egg and cream cheese* croissant

Turkey Cranberry Croissant
recipe from Great American Favorite Brand Name Cook Book aka "the big red cook book"

Thin sliced cooked turkey (450g)
1 package (8oz) cream cheese, softened
1/4 cup orange marmalade
1/2 cup chopped pecans
6 croissants or rolls
3/4 cup whole berry cranberry sauce
Lettuce leaves

Combine cream cheese, marmalade, and pecans in a small bowl. Spread top and bottom halves of croissants with cream cheese mixture. Layer turkey on bottom halves. Spoon two tablespoons cranberry sauce over turkey. Add lettuce and croissant tops. Yeild: 6 sandwiches.

The actual cream cheese mixture I found a bit on the bitter side. Maybe my marmalade was just too bitter. So I added lots of finely chopped pineapple to sweeten it and I used almonds in place of pecans because that's what I had. And then I added about a tablespoons finely chopped green onion just to liven it up a bit. And then it was really yummy. And there was a lot of leftover cream cheese mixture and that is what I used on my fried egg, bacon and avocado sandwiches for breakfast and it tasted amazing!!!
